The rhizome of ginger has an irregular shape, it’s twisted and gnarled, reaching up to 5-6 inches in length. Ginger is highly valued in oriental cuisines from India, Malaysia, Nepal, Bangladesh etc. An alternative name of ginger, introduced by the Turks in Moldavia and Wallachia was the ‘white pepper’. The name, Ginger has been used mainly in Banat and Transylvania from the hungarian language “gyömber” and then it was imposed across the country. In former British colonies such as Canada, Australia, Jamaica, Kenya, they consume a so-called “beer” of ginger (ginger beer) which is actually a non-alcoholic drink.
Important active substances contained in ginger are specific compounds called gingerols, phenols, volatile oil.
